Kevin’s Famous Peanut Butter Chip Cookies

I love my husband dearly, but we are very different.  We used to think we were so much alike when we were dating, but now we laugh at that thought!  We agree on the “big” things, but have realized that we are very different when it come to the small things.The one thing that we absolutely agree on, though, is our love of peanut butter cookies.  We will eat a peanut butter cookies at any time of day.

With that being said, it’s about time I shared Kevin’s famous peanut butter cookies with you.  So you know, our friends have come to know Kevin as the baker of the family and they often request cookies when they come over.  Recently, he’s spent a lot of time perfecting my original recipe, which is fine by me.  Just so you know it’s tried and true, my husband baked 2 big batches of them earlier this week to confirm his method once and for all.  Here goes!

Ingredients:
1/2 C. butter
1/2 C. granulated sugar
1/2 C. brown sugar
1/2 C. creamy peanut butter**
1 egg
1/2 tsp. vanilla
1-1/2 C. peanut butter chips**
3/4 tsp. baking soda
1/2 tsp, baking powder
1-1/4 C. all purpose flour

1/4 tsp. salt

Directions:

1.  Combine melted butter, sugars, peanut butter, egg, and vanilla.  Stir until smooth.

2.  Stir in peanut butter morsels.

3.  Add remaining dry ingredients and stir until dough is mixed well.

4.  Shape dough into small balls {about 1 T. each}, placing them on a lightly greased baking sheet.  Press the dough down slightly with a fork to make ridges down the center.

5.  Bake at 350 degrees for 10 minutes. Remove cookies from oven and let rest for approx. 3 minutes.

6.  Transfer cookies to the cooling rack and let cool for an additional 5 minutes.

**Notes:  I recommend using a honey roasted flavor peanut butter if you can find it.
Also, you can omit the peanut butter chips if you’d like and these cookies will still be delicious, but I am convinced that they help make this cookie extra yummy!This recipe yields approximately 30 cookies, depending on how big you make them.
